I am always confused, Why all international players hit topspin on topspin, when you could simply counter finish the topspin ball.

The flatter smash is a much riskier stroke to play. From further away from the table it will also lose speed quickly and end up quite slow by the tie it reaches your opponent.
The counter topspin stroke will give you much better margin for error over the net and also get to your opponent moving a bit faster.
