On the forehand loop I seem to be very clear how to vary the speed but I have no clue what modification varies the spin. I had asked earlier if you think flexing the elbow gives more topspin?
If not, how do I make the shot more or less spinny ?

The contact will give you good variation. A flatter contact will give you less spin and a thinner or brushing contact will give you more spin on the ball.

THE BAT ANGLE SHOULD BE OPEN OR CLOSED?
You can change the angle to get different contacts.

Hi coach, I've been working on trying to maintain a soft grip and soft wrist so I can improve my blocks against these monster shots, it's been a real challenge in itself, but now I noticed this adjustment has made me slap the ball when I attack rather than brush it so I'm losing that spin effect, what should I do to try and find the balance?
Now focus on the brushing while maintaining the relaxed wrist. This is possible.
