I have seen various professional players changing the direction of their smash, but with the same stroke as they have excecuted earlier. can you tell me how they do it.

Changing direction can be as simple as a slight change of a few degrees in your wrist position. It can also be a slight alteration in the timing of the stroke. By hitting it a fraction of a second earlier the ball will go more cross the table and slightly later will make it go more down the line.
