Thanks for answering my question. On a serve is the ball allowed to go off the opponent's side of the table , or does it have to come straight off the back. If so why does it seem like professionals don't aim for the sides?

Hi John,

The serve is allowed to go off the side of the table.

If you serve too wide it opens up the angles for your opponent on their return.  It will also mean that there will be only one bounce on the table which means it is easier for the returner to attack the ball.

That is why most serves will go to the middle of the table.
