Which racquet to choose if you are a chopper or play a lot of chop?

The main thing is to get something that is slower to allow you to be able to control the faster balls coming form an attacking player.
You could choose different rubbers for forehand and backhand. A lot of defenders will use a slower rubber not he backhand, even a Long pimple rubber or a slower inverted rubber. Their forehand rubber may be faster to allow them to be able to attack when the opportunity arises.
