Hey,
When I topspin against backspin, I just hit the ball in a brushing action, quite vertically. But this gives me little to no power.
I've heard another method of topspinning backspin balls is to have an open racket and hit the ball flat and hard.
Is that stroke usable/correct? Or is that just an incorrect stroke that doesn't work well?

The flatter you contact the ball the less margin for error you have because there is less topspin on the ball and therefore less dip on the ball.
It is a legitimate way to lift the ball as long as you understand the risk.
