And also say that other player standing at one end of table and missing the ball why dont they stand at centre of the table.

It is an incredible serve because he doesn't give anything away with his swing or position but changes the direction of the ball at the last second. This of course takes a lot of practice.
The other player is standing in the far corner sometimes because that is the natural angle the serve tends to come. It is difficult for him to serve it down the line so fast.
