For the first part take a look at the lesson on the Backhand Topspin Off Backspin.
You can smash a really high topspin ball. Just wait for it to come down to shoulder height or head height and then play your smash stroke. Take a look at the lesson on the Forehand Smash.
For topspin when you don't know what type of spin is on the ball, brush the ball very finely and very fast. This will give you the best chance of getting it on. However, it is important to keep working on trying to recognise spin so that you can make a more reliable stroke.
