Hi Jeff and Alois,
At 0:42 in this video Clash of Defenders : Koji Matsushita v. Joo Se Hyuk. Matsushita does a spin move while he chops. What is the point of this? How can I do this?

It is an extremely good point that he plays there.
The defender will sometimes do a spin when his body is going around that way and it is easier to keep going around rather than stopping and recovering back the same way. It is OK sometimes as a defender because you have more time while you are away from the table.
It can be quite disorienting to do though the first few time. It may be something that you can have a try at and see if you can pull it off.
How is it that a player can always seem to get back those extremely fast topspins? Is it their incredible anticipation? The key to good anticipation actually lies in tracking the ball well. When you watch the ball closely your peripheral vision will pick up your opponents movements and with lots of practice those signs will help you anticipate what your opponent is going to do. This happens naturally with lots of experience. So it it your job to ensure that you are tracking the ball really carefully.
