When I counter with a smash they easily return and it travels so fast when I hit the ball it flys right past me so how do I know what time to counter?

You have problem when an opponent returns  your smash or when your opponent makes a smash?

Yes usually when he smashes really fast I don't know how to counter it 

either with a smash or to just hold my bat in the blocking position

Counter a smash when you are close to the table is something so difficult that only a luck can help you.

To counter a smash,you must go back away from the table and make a lob or a chop.

But even better defense against smashes is when you do not allow your opponent to smash by keeping the ball low.
