How to return a serve or any shot especially in doubles which is played very wide of my backhand side as I could not move towards that side in a comfortable speed. I am a right handed player, tried switching the bat in other hands few times but it doesn't help most of the times.

I think it is better to practice your movement than trying to change hands.
The most important part of the movement is to jump sideways with both legs at the same time. This is more efficient. Try to jump behind the ball so the ball is in front of your body.
If you can 't make it wide enough with your legs then focus on your bat moving in the right direction still. This is more difficult and will take a while to improve.

If you concentrate on these 3 factors then your stroke will become extremely consistent. Once you can reliably hit 100 balls in a row then you are ready for more attacking strokes. If you can hit 1,000 balls on in a row then you know you've truly mastered the stroke.
