Why in every match they don't use a ghost serve every time?

Hi Chris,
At a higher level the players can see the serve coming and they will step around the table and hit the ball hard.
It is more important to get the serve low and with a lot of backspin.

Varying the spin on your serve makes it harder to return. You can vary the type of spin but possibly even more effective is varying the amount of spin.
