I was watching his match vs Fan Zhendong and Pitchford has a very deceptive, late touch to the backhand corner or a forehand flick to the opposite side. How can I replicate this?

It is an impressive shot that he played well during that tournament in particular.
The Forehand flick that he plays down the line to the Backhand corner is hit very late. The key is opening up the wrist at the start of the shot which enables the ball to go in that direction.
