Personally,I like to watch Matsushita Koji from Japan,since he looks most mobile,agile,as someone said "he's a ninja" :D

mick, waldner is a very famous blocker, but not a defender.

erfan, you can also watch yuto muramatsu, kang dongsoo, jang song man, hou yangchao, pantanus adam, aida satoshi; and I can enlist a lot of female players.

Rajdeep is right,Waldner had great blocking defense when needed,but he is mostly renowned for his tactics and anticipation skills.
I am surprised,Rajdeep,that you know Kang Dong Soo,I have heard only one other person knowing about him so far.

I should also add to the list Norio Takashima,most probably the last dual inverted chopper at pro level,who was in the final of WTTTC. But it was quite a lot of years ago.
Mr. Takashima is over 70y old these days
