When I find myself in an awkward position (footing wise I think), the ball always goes off the end of the table.

This is why we need to practice our strokes from different positions.
Initially you can practice your stroke from a standard position to get the feel of the stroke. As you start to develop though it is important to then play the strokes from different positions and from different movements. This allows you to develop a feel for being able to adjust your hand and bat to different angles to get the ball on the table. This is an important part of development that if often overlooked when training.
The reason that the ball is going off the end of the table is because at this stage you are not adjusting your hand or bat angle. It probably needs you to close the angle slightly.
The forehand block is one way to counter a topspin stroke hit to your forehand side. Learn this stroke and you will be able to keep yourself in the rally even when your opponent get the first attack in.
