How do I play against a player who plays his backhand with a lot of back- and sidespin and then hits a really hard forehand.

When he is playing the backspin sidespin ball you should try to attack with a topspin. This will keep him away from the attack and also make it difficult for him to make the backspin ball to you.
The stroke you should work on is the Forehand Topspin Off Backspin. YOu will need to allow for the sidespin on the ball. Don't change your stroke too much at all. Just angle your bat to allow for the sidespin. So if the ball is spinning off to your left, angle your bat through the topspin a little more to the right.
