Surely there's more to it than just anticipation and luck? How is he able to perform such a strong counterattack?

It is a lot about anticipation and seeing the ball so well.
You will notice in a lot of these shots that he is totally relaxed and almost giving up on the point when he makes these incredible shots. The one at 0:28 looks like a very strong counter topspin.
A great weapon is being able to vary the amount of speed and spin on your forehand topspin stroke. By making your stroke more vertical and brushing the ball finely, you can generate more spin. For more speed you need to swing more horizontally.
